Dags & Willow an iconic cheese and gourmet food shop in Collingwood Downtown that boasts the largest collection of artisan cheeses in the area, as well as a wide selection of fresh and frozen prepared foods is under the new ownership of Tammy Beauchamp and Scott Irvine.
“We are foodies. We love to cook at home and are inspired by looking on-line, visiting local restaurants or markets and even find culinary motivation from our own shelves and cheese cases.” explains Scott. “We are extremely fortunate to have such knowledgeable staff that really understand the finer points of cheese pairing. It’s not just the cheese, it’s what you can pair it with to create a unique taste experience and flavour profile. Having a conversation with a team member is a learning experience in itself “. he continues. “They can make excellent recommendations about the types of cheese to select, what to pair it with, how to prepare a cheese tasting board or charcuterie and even how much you might need depending on how many people you’ve invited over.”
The couple were looking for a business that they could run together in a location where they wanted to live so when the opportunity to acquire the business was presented to them, they did their research, due diligence and then signed on the dotted line prompting their move from Niagara-on-the-Lake. February 1, 2024, will mark the first year of business ownership for Tammy and Scott and they couldn’t be more pleased with their decision to buy the business and move their lives to Collingwood.
Looking to the near future, Tammy and Scott are changing things around on the second floor and we can look forward to a private event space that can accommodate up to 30 people with a huge harvest dining room table that can seat 14 people comfortably. “We’re working with local designer Jassy Sidhu of JS Design House to create a space that is as welcoming as your own living room and dining room. We want it to be an intimate space that people can really feel comfortable in and enjoy” says Tammy.
Fun fact: Dags & Willow has over 150 varieties of cheese in the display case at any one time with access to over 2,000 varieties in all.
