Meet Your Neighbour: 1858 Caesar Bar

   

With over half a million Caesars sold to date, Vanessa and Steve Walker couldn’t be more excited about the success of 1858 Caesar Bar, what they have accomplished with their team and where they are headed.  This extremely popular destination in Collingwood Downtown is a bar, restaurant, gathering place and tourist destination bringing people together to enjoy, explore and celebrate Canada’s iconic national cocktail.

1858 Caesar Bar had humble beginnings, opening the doors with only 14 seats in 2019.  As soon as word got out that they were open for business, Vanessa and Steve realized instantly that they had outgrown their existing footprint as the line-up of eager patrons was stretching down the block. “We were scrambling that day; it was a bit crazy trying to keep up with the demand. It was a huge rush of excitement, combined with a touch of panic.” recalls Vanessa.

Fast forward to the present day, 1858 Caesar Bar moved their business to a much larger location which can accommodate up to 120 people if you include the two beautiful patios and the upstairs space.  They also expanded their menu and introduced a popular line of their own take-home elixirs, rimmers, craft vodkas and merchandise.

One of the first things you notice when you step inside is that the seating arrangement is designed with community and conversation in mind and what better thing to chat about than ‘what Caesar are you going to try today?’.  With over 50 signature Caesars available to choose from, you can also build your own, the combinations are endless.  If you’re the type that likes to experiment a bit, try a tasting flight and if you just can’t make up your mind, the attentive servers are more than happy to help you along with your selection.  With all the choices available, you can easily create a meal while you’re building your Caesar, but if that’s not enough for you, you can order from their food menu that also offers an excellent selection for kids too.

The couple opened their second location in Sauble Beach, on the Bruce Peninsula which is open seasonally from May until September. With another corporate location and three franchise locations opening in 2024 (Charlottetown, PEI, Huntsville, ON and Waterloo, ON), 1858 Caesar Bar is well on its way to opening Caesar Bars Across Canada!

Fun fact: The name 1858 Caesar Bar is an homage to the Town of Collingwood which was incorporated in the year 1858.

If you look, you can see ‘1858’ on everyone. Tip: If (dare we say it) Caesars are not your beverage of choice, you’ll be ok.  1858 Caesar Bar also offers a nice selection of beer, wine, and spirits to quench your thirst.
